How to Make a Pumpkin Spice Latte at Home (Without the Syrup)
Most homemade pumpkin spice latte recipes start by having you make a syrup — simmer pumpkin purée with sugar and spices, strain it, refrigerate it. It works, but it's twenty minutes of cooking and the result is mostly sugar.
There's a shorter path. If the spice is already in the coffee, you don't need the syrup at all.
What you need
- Pumpkin spice coffee — about 2 tablespoons, ground for your brew method
- Milk — 6oz. Whole milk froths best; oat milk is the best non-dairy option by a wide margin
- Sweetener — optional, to taste
- A frother — handheld wand, French press, or just a jar with a lid
The method
1. Brew it strong
You want roughly double your normal strength, because milk will dilute it. Use 2 tablespoons of grounds to 4oz of water. If you have an espresso machine, pull two shots instead. Standard-strength drip coffee will taste watery once the milk goes in — this is the step people skip and then wonder why it tastes weak.
2. Heat the milk
Microwave 6oz for about 45 seconds, or warm it in a saucepan. Target around 150°F. Hotter than that and the milk proteins start to break down and it turns thin and slightly sour.
3. Froth it
Handheld wand: 20–30 seconds until it roughly doubles. No wand? Pour the warm milk into a jar, seal it, and shake hard for 30 seconds. A French press works too — plunge rapidly ten or fifteen times.
4. Combine
Coffee into the mug first, then pour the milk in, holding the foam back with a spoon. Spoon the foam on top at the end. Add sweetener now if you want it — start with less than you think, because the spice reads as sweeter than it is.
Iced version
Brew double-strength and let it cool, or better, use a cold brew concentrate. Fill a glass with ice, pour the coffee to halfway, top with cold milk. Getting it right
- Too weak? Almost always under-brewed rather than under-spiced. Add coffee, not spice.
- Milk won't foam? Too hot, or it's skim. Whole or oat.
- Tastes flat? Check the roast date on your beans. Flavored coffee fades faster than unflavored — past about a month, the aroma is there and the flavor isn't.
- Want it sweeter without sugar? A splash of vanilla extract adds perceived sweetness with none of the sugar.
