The name refers to the roast, not the origin. This is Colombian coffee — Supremo 17/18 from the family farms around Pereira, in Risaralda — taken to an Italian roast, the darkest level before a coffee starts tasting of nothing but smoke.
Most coffees lose their fruit at this roast level. This one holds on to enough cherry and blueberry to keep the cup lively rather than flat, and picks up the chocolate and caramel that only develop that deep in the roast. The result pulls a thick, syrupy espresso with real crema.
Producers here work plots averaging about two and a half hectares, picking and processing at their own micro-wet mills and drying on elevated tables inside solar dryers — necessary protection in a region with an almost continuous rainy season.
