Smoky richness with cherry, blueberry, chocolate and caramel notes, a lively effervescent acidity, and a lightly syrupy body. Perfect for espresso, with an amazing crema.
What makes this cup unusual is that the fruit survives the roast. Most beans taken to an Italian roast give up their acidity entirely and go flat and smoky. These do not — the cherry and blueberry are still there underneath, because of where they were grown and how carefully they were processed.
They come from the Pillimue family's community in Inzá, Cauca. The Pillimues led a program that certified 80 local producers in organic practices, and that group has since become known for innovation — running workshops on re-using farm waste and making cheap, effective bio-fertilizers. Many of these families had already been farming with little or no chemical input for generations before any certificate existed.
