Our Fair Trade Organic Colombian French Roast is a full-bodied coffee with rich caramelized sugars. The cup is low in acidity with a bold, robust, bittersweet finish — a rich tasting cup without any of the charred or overly bitter notes some French roasts are known for.

The reason it can go this dark without turning to ash is the bean underneath. These come from very small farms around Inzá, in Colombia's Cauca department, where growers tend their own land and hold on to their traditions. Many of them have produced coffee with little or no chemicals for generations — long before organic certification came to the region.

Beans grown slowly at 1,800 to 2,100 meters are dense, and dense beans hold their structure at a French roast where softer coffee simply burns. That is where the caramelized sugar comes from rather than char.
