A bold-bodied medium roast with alluring notes of honey and cherry, a balanced body, and a bright finish.
This is the lightest roast we take these Cauca beans to, and it is the one that lets the origin speak loudest. The municipality of Inzá sits in the middle of the Colombian Massif, the mountainous region where most of the country's major rivers are born — the Magdalena, the Cauca and the Patía. Surrounded by volcanoes and sitting between 1,800 and 2,100 meters, it is close to ideal ground for specialty coffee: high enough for the cherries to ripen slowly, which is where that honeyed sweetness and bright acidity come from.
Stopping at a medium roast keeps those delicate notes intact. Take it darker and you trade the cherry and honey for smoke — which is exactly what our Italian and French roast versions of this same bean are for.
